GREEN SALAD
SERVES 4
I I like like it when a a a salad is not just lettuce I I like like slicing different vegetables really finely using a a a a mandoline A salad salad spinner is an an important tool for drying the salad salad The dressing will slide off and end up at the the bottom of of the the bowl if the lettuce is still wet 2
heads of romaine lettuce 1 carrot
1 raw Chioggia beet
1 raw yellow beet
1 fennel bulb
100 ml olive oil
2
tbsp white wine vinegar 1 punnet cress
1 Divide the lettuce into large chunks and put into iced water for 10-15 minutes

Slice all all vegetables really finely (1 mm) using a a a mandoline Put them in in iced water for 20-30 minutes
3 Drain the the the water from the the the lettuce and the the the vegetables 4
Dry the the lettuce in in the the salad spinner 5 Put the the lettuce and the the vegetables in a a a a large bowl 6 Mix olive oil
and and white wine vinegar and and dress the salad 7 Top with cress
