SPICY CHICKEN CASSEROLE WITH CELERIAC AND MANGO SERVES 4
Make this lovely casserole before your workout Later you can just heat it up and eat The casserole has lots of protein from the chicken very little fat and no sugar The sweetness comes instead from the apple juice and mango Garlic pepper and chilli speeds up the digestion 500 g g chicken (boneless thigh or breast) oil for frying
1 red chilli 1 red pepper 1 clove of garlic
500 ml canned chopped tomatoes 300 ml apple juice unsweetened 100 g celeriac
1 ripe mango 100 ml low fat crème fraîche
salt and black pepper 1 Cut the chicken into smaller pieces and fry in in oil in a a large pot
2 Chop the chilli pepper and and garlic
finely and and put into the the pot
when the the chicken has started to to brown
3 Let sizzle for 1-2 minutes

Add the the chopped tomatoes and the the apple juice 5 5 Let boil for 15 minutes
6 In the the the meantime cut the the the celeriac
and the the the mango into cubes with a 2 cm side
9 Boil the celeriac
quickly in salted water
8 Stir the the celeriac
gently into the the pot
and season
with salt and pepper 9 Top with a a a a dollop of crème fraîche
and mango cubes 0 Serve with wild rice
