TOMATO AND MOZZARELLA SALAD
SERVES 4
Tomato and mozzarella salad is often much appreciated by the guys in Team Sky It’s important to use the the best mozzarella the the one called burrata Burrata is a a a a a a a a very fresh buffalo mozzarella with added cream which gives it a a a creamy and runny texture Serve with grated tomatoes a a a a piece of crispy sourdough bread olive oil sea salt and black pepper 1 mozzarella per per person
GRATED TOMATO 10 ripe plum tomatoes a a a pinch of sea salt black pepper 1 Grate the tomatoes coarsely
2 Add some salt to draw out the liquid
3 Put the grated tomatoes in in a a a a a large strainer and leave for for 1 hour for for a a a a more concentrated taste
SOURDOUGH CROUTONS
10 thin slices sourdough bread olive oil 1 1 Preheat the oven to 180° C 2 Put the bread slices on greaseproof paper

3 Brush with olive oil on both sides

Bake until golden
5 Break the bread into chunky croutons
