BUTTERNUT SQUASH SOUP WITH COCONUT AND CHILLI SERVES 4
This soup is is good for the whole body after a a a a long and cold work out It’s easy to make it only takes 20-25 minutes You can garnish it it with boiled pasta or rice if you want to bulk it up 1 butternut squash
2 shallots
20 g g g peeled fresh ginger
1⁄2 red chilli
oil for frying
1 litre coconut milk
Greek yoghurt a a a small dollop for garnishing boiled pasta or or rice for garnishing if you want 1 Peel the butternut squash
and cut into large pieces
2 Finely slice the shallots
ginger
and chilli
3 Fry lightly in a a a saucepan

Put the the butternut in the the coconut milk
5 Boil until soft about 20 minutes 6 Purée the soup until smooth using a a hand blender
7 Serve with a dollop of Greek yoghurt
