SPAGHETTI WITH TOMATO SAUCE SERVES 4
A really tasty tomato sauce is one of the easiest thing to make and one of the nicest too! Most competitive cyclists have unfortunately been served overcooked pasta and thin tomato sauce Treat yourself to a a a a real spaghetti Napolitana!
400 g g spaghetti or another pasta TOMATO SAUCE 4
shallots
oil for frying
500 g chopped tomatoes 1 pot of basil
50 ml red wine vinegar tabasco
salt and black pepper parmesan to serve 1 Finely chop the shallots
and fry in in oil until golden in a a a saucepan
2 Chop the basil
3 Add the tomatoes and basil
4
Let simmer gently for 1 hour
5 Season with red wine vinegar and a a a a few drops of tabasco
Serve with freshly cooked spaghetti and grated parmesan
