            Marinated Button Mushrooms
Try this tasty recipe with cremini or oyster mushrooms!

 Ingredients
Serves 4
Preparation
• Remove dirty stem bottoms from mushrooms . Wash . If mushrooms are large, cut into quarters . Put into a bowl .
• In a pot, combine vinegar, olive oil, lemon juice, tomato puree, bay leaf, brown sugar, coriander seeds, salt, and pepper, and bring to a boil, stirring often . Simmer gently for two minutes .
• Pour boiling mixture over mushrooms and marinate overnight in the refrigerator . The

• 2 tbsp (30 ml) olive oil
• 1 tbsp (15 ml) lemon juice
• 1⁄2 cup (125 ml) tomato puree
• 1 small bay leaf
• Pinch of brown sugar
• 1 tbsp (15 ml) coriander seeds
• Salt and pepper
• Chopped fresh parsley or cilantro to garnish
a deliciously fragrant sauce .
• Serve chilled, garnished with chopped parsley or cilantro .
