            Marinated Button Mushrooms
Try this tasty recipe with cremini or oyster mushrooms!

Serves 4
• Remove dirty stem bottoms from mushrooms. Wash. If mushrooms are large, cut into quarters. Put into a bowl.
• In a pot, combine vinegar, olive oil, lemon juice, tomato puree, bay leaf, brown sugar, coriander seeds, salt, and pepper, and bring to a boil, stirring often. Simmer gently for two minutes.
• Pour boiling mixture over mushrooms and marinate overnight in the refrigerator. The

• 3 tbsp (45 ml) apple cider vinegar mushrooms will release their juices, creating
• 2 tbsp (30 ml) olive oil
• 1 tbsp (15 ml) lemon juice
• 1⁄2 cup (125 ml) tomato puree
• 1 small bay leaf
• Pinch of brown sugar
• 1 tbsp (15 ml) coriander seeds
• Salt and pepper
• Chopped fresh parsley or cilantro to garnish
a deliciously fragrant sauce.
• Serve chilled, garnished with chopped parsley or cilantro.
