            Black Bean Salsa
Serve this ever-so-slightly spicy salsa as a side with chips or as a light lunch salad.

 Preparation
• In a glass bowl, combine black beans, tomatoes, onions, garlic, cilantro, peppers, jalapeno, vinegar, and sugar. Toss well. Add salt and pepper to taste.
• Let sit for 1 hour before serving, stirring occasionally.
Ingredients
Serves 4
• 1 can (19 oz or 540 ml) black beans • 2 tomatoes, seeded and diced
• 2 green onions, chopped
• 3 tbsp (45 ml) white onion, chopped • 1 clove garlic, minced
• 3⁄4 cup (180 ml) fresh cilantro, chopped
• 2 tbsp (30 ml) red pepper, chopped
• 2 tbsp (30 ml) jalapeno pepper, chopped • 3 tbsp (45 ml) corn kernels
• 1 tbsp (15 ml) balsamic vinegar
• 1 tbsp (15 ml) sugar
• Salt and freshly ground pepper
