            Maple Vinegar
Maple vinegar is made from maple sap and maple syrup. One document from 1913 reveals that, at the time, between 25 and 30 gallons of high quality vinegar could be obtained from 1,000 tapped trees.
At 50°F, alcoholic fermentation occurs spontaneously in barreled syrup. This is the first step in maple vinegar production. The next step is the addition of one or two yeast tablets or a quantity of raisins. After two weeks fermentation is complete, and the liquid is carefully filtered and combined with a small amount of older vinegar.
