            Beet and Endive Salad
A few classic ingredients added to leafy greens create an elegant balance of colors, flavors, and aromas.

 Ingredients
• 2 small beets
• 3 endives
• 2 cups (500 ml) watercress
• 1 tsp (5 ml) Dijon mustard
• 1 tbsp (15 ml) apple cider vinegar • 1 pinch sugar
• Salt and pepper
• 1 shallot, minced
• 1⁄4 cup (60 ml) olive oil
Preparation
• Cook beets in microwave in a small amount of water for about 12 minutes. Let cool. Peel and slice.
• Combine endive leaves, beets, and watercress in a salad bowl.
• In another bowl, prepare vinaigrette by combining mustard, vinegar, sugar, salt, pepper, and shallot, and then slowly add oil in a steady stream.
• Dress salad.
