            Balsamic-Grilled Chicken with Sea Salt
The perfect dish for a summer barbecue or a cozy winter meal — a hit with kids and adults alike!

Serves 4
• 3 tbsp (45 ml) olive oil
• 3 tbsp (45 ml) balsamic vinegar
• 1 pinch dried oregano
• 1 pinch coarse sea salt or fleur de sel • Freshly ground pepper
• 8 chicken drumsticks
• Wooden skewers
• 3⁄4 cup (185 ml) water
• Preheat barbecue or preheat oven to 400°F (210°C). In a bowl, combine oil, balsamic vinegar, oregano, salt, and pepper.
• Thread drumsticks onto skewers that have been soaked in water for 30 minutes. Balance skewers on the edges of a high-sided oven- safe rectangular pan, making sure the chicken does not touch the bottom of the dish.
• Brush drumsticks with sauce, and pour 1⁄2 cup (125 ml) water into bottom of pan.
• Place pan on barbecue grill or oven rack. Halfway through cooking, deglaze pan with a spatula and add remaining water. Turn skewers occasionally to ensure a golden brown skin, brushing with marinade each time.
• Serve with a green salad.
