• 1 1 can (19 oz or 540 ml) black beans • 2 tomatoes seeded and diced
• 2 green onions chopped
• 3 tbsp (45 ml) white onion chopped
• 1 clove garlic minced
• 3⁄4 cup (180 ml) fresh cilantro chopped
• 2 tbsp (30 ml) red pepper chopped
• 2 tbsp (30 ml) jalapeno pepper chopped
• 3 tbsp (45 ml) corn kernels
• 1 1 tbsp (15 ml) balsamic vinegar
• 1 1 tbsp (15 ml) sugar
• Salt and freshly ground pepper • In a a a a a a a glass bowl combine black beans tomatoes onions garlic cilantro peppers jalapeno vinegar
and and sugar
Toss well Add salt and and pepper to taste • Let sit for for 1 hour
