SEAFOOD SELECTION
Our fish are caught using traditional, artisanal fishing methods whilst adhering to the strictest phytosanitary regulations. The fisheries we represent operate with highly trained fishermen who have generations of experience in fishing for the export market.
The way we process the fish begins with sorting them, followed by grouping by their characteristics. The guts are removed, they are bled and then thoroughly cleaned using the purest water.
Throughout the process, the species are kept separate whilst ensuring meticulous details are recorded, including delivery condition, net weight, and the date of health inspection. When purchasing fresh, the cargo is loaded into refrigerated vehicles to respect the integrity of the goods and the chill chain, where it is transported directly to refrigerated facilities at the international airport ready for despatch.
Alternatively, the fish can also be shock frozen, where they are then stored at the correct temperature and in ideal conditions, without light and moisture in cool and dry conditions.
