Ukraine has been a border region since time immemorial. It's not even national cuisine, since, frankly, it's neither too sophisti- cated nor exotic in terms of ingredients, and it's a far cry from "healthy eating”. Of course, the varenikis and borsch are divine, but above all it is the quality of the products that counts. Everything that grows in Ukraine is extremely delicious. There are large fields with black earth, the most fertile land in the world, where under the sun grow fruits and vegetables with exceptional taste.
