Changing dietary behaviour through design
While people choose how active they are and what they eat – is their local community or workplace in uencing their behaviour?
Would people eat more fruit and vegetables if they were the rst foods they encountered at the supermarket – or in a buffet lunch? Would they cycle or walk, rather than take the car, if their community was better connected to shops and parks?
This debate brings together leading experts to explore how scienti c understanding of people and design can lead to changing behaviour and improved lives.

Mainstreaming the role of reformulation
Taste is the most important factor when people choose what to eat and drink - but the introduction of a sugar tax and a sugar reduction programme is challenging manufacturers to scale up their reformulation efforts. But how can they innovate quickly to reduce sugar, fat and salt in their products - without taking away the texture, shelf life, colour and appearance that consumers’ demand? And, how do retailers, the out-of-home sector and foodservice providers market ‘better-for-you’ as the best choice?
