(Serves 6) INGREDIENTS:
4 chicken drumsticks, skinless (or other bone-in cuts)
1 medium brown onion, finely diced 200g canned chick-peas, rinsed and drained
2.5 litres water
5cm cinnamon stick
1/2 lemon, juice of
1 large egg yolk, beaten
1/4 cup fresh parsley, finely chopped 2-3 teaspoons olive oil
1 1/2 tablespoons basmati rice
Salt and pepper
DIRECTIONS:
In a large pot gently fry the onion in the olive oil. Add the chicken and the cinna- mon stick and fry for 8 minutes, turning the chicken around to seal.
Add the water and some salt and pepper to taste. Cover and simmer for 1 hour and 15 minutes on a medium heat.
Remove the chicken from the bones and place the chicken back in the pot.
Add the chickpeas to the pot and simmer for further 10 minutes covered.
Check the seasoning and adjust if re- quired. Add the rice and cover and cook for 15 minutes.
Add more water and adjust seasoning or simmer uncovered if the soup is too con- centrated or too watery.
Finally, mix the egg yolk with the lemon juice. Add a few teaspoons of the soup to the mix and whisk then add the egg mixture to the pot in a thin steam, stirring continu- ously. Cook for 1 minute then add the pars- ley and take off the heat.

A spokesperson for the Animal Welfare League Queensland said Dorothy was “a sweet-natured companion cat” looking for a home. “With a soft and agreeable personality, Dorothy is seeking a safe and nurturing home that will let her live indoors, snuggle on lounges and sleep on your beds,” the spokesperson said.
