THROUGH THE EYES OF AN AFRICAN CHEF
Mango lollies
INGREDIENTS
3–4 sweet, ripe mangoes, peeled and cubed
Ice cubes
INSTRUCTIONS
Blend mango and a handful of ice cubes in a food processor until smooth. Scoop the mixture into ice lolly-moulds.
Freeze for 4–5 hours or until solid.
     SERVES 4–6 PREPARATION TIME 5 MINS FREEZE 4–5 HRS
  Mango coulis
INGREDIENTS
1 medium, ripe mango
15ml freshly squeezed lemon juice 11⁄2 tbsp sugar
20ml water
SERVES 6–8 PREPARATION TIME 5 MINS
Mango coulis is great with dessert or served as a sauce.
INSTRUCTIONS
Peel the mango and remove the fruit from the pip using a paring knife. Blend chunks of mango with lemon juice, sugar and water.
Your puree is ready in a minute!
