If you’re anything like me you’ll buy bananas with the best intentions and then find at the the end of the week you have a few left over says Alasdair Nunn of RachAls Kitchen Ltd, the Halifax based caterers. We know nobody wants to throw food away and as such, what be er way to use up some left over ingredients than to make a delicious,moist and nu y banana cake.
Ingredients:
100g soft bu er and a li le extra for greasing
140g soft demerara sugar
1 beaten egg
1/2 tsp nutmeg
1/2 tsp all spice
225g plain flour
2 tsp baking powder
4 ripe bananas
85g chopped walnuts
50ml milk
Banana and walnut loaf
Method:
Firstly heat your oven to 180C/160C fan/gas 4 and then grease a 2lb loaf tin with a li le bu er and line it with baking paper.
In a large bowl, firstly mix (with
an electric whisk) the bu er and sugar until light and fluffy and then add the egg followed by the flour, baking powder and spices. Once combined mash in the banana, add
the milk and combine all the ingredients
together including the nuts.
Pour the mixture into the tin
and bake for approx. 1
hr or until a skewer comes out
clean when placed into
the centre of the cake.
Allow the cake to cool on a wire
rack before removing from the loaf tin.
