Fortification Recipes
for caterers in health and social care
ALMOND & CHERRY AND PINA COLADA SHAKES
Serves 200ml per portion
ALMOND & CHERRY SHAKE
INGREDIENTS
1250ml unsweetened almond milk 750g cherry yoghurt
10x scoops vanilla ice cream 250ml double cream
METHOD
300g cherry juice 90g milk powder 50g ground almonds
Blend all ingredients together and serve in a chilled glass.
PINA COLADA
INGREDIENTS
585g pineapple, chopped 420ml coconut milk
400g coconut yoghurt
METHOD
170ml double cream 170ml pineapple juice 50g milk powder
Add all ingredients to a blender and blend until smooth.
NUTRITIONAL NOTES
Forti ed drinks can o er an easy way to increase protein and energy using ingredients such as milk, yogurt and cream. These drinks also include a variety of fruits and vegetables, all counting towards 5-a-day.
CHEF’S TIP
Freeze milk into ice cube trays and serve in drinks so not to dilute the nutrition.
