She committed to memory the various employees who have severe allergies to chocolate, coconut, and berries, as well as those who are vegetarian and strictly vegan. “I’m very serious about using all separate cutting boards and cooking utensils, and always keeping the work stations clean and sanitized,”
she adds.
As a point of pride and perhaps conviction, she quickly points out there’s no deep fryer in her kitchen, and insists she won’t serve fried chicken tenders or
other such provincial processed fare at Allium Café.
Far from it, in fact.
From French-American recipes to Moroccan meals, Ethiopian fare, and Vietnamese-inspired soup, the menu widely spans the gastronomic globe. And only a couple of items have been repeated in the café’s two-year run. Perhaps most telling of this corporate treasure is the holiday feast employees enjoyed—complete with a Christmas goose. “That meal went a little over budget,” Lydia laughs.
