3. Brush skinned side of salmon fillets with oil, then place skinned side down on plank. Cover grill and cook until center of salmon is translucent when checked with tip of paring knife and registers 125 degrees (for medium-rare), 12 to 15 minutes. Using tongs, transfer plank with salmon to baking sheet, tent with aluminum foil, and let rest for 5 minutes. Serve with lemon wedges.
TEST KITCHEN TECHNIQUE HOW TO SOAK A CEDAR PLANK
To keep your cedar plank from catching fire, you must soak it for an hour before grilling. We set the plank in a rimmed baking sheet, cover it with water, and weigh it down with a measuring cup to keep the plank submerged. You can find cedar planks near the charcoal in most grocery, big box, and hardware stores; one plank will easily hold four portions.
PREVENTING FLARE-UPS: A good long soak keeps the flames at bay.
