  INGREDIENTS
Grilled Tequila-Lime Fish Tacos with Cilantro-Lime Crema

Cilantro-Lime Crema:
3⁄4 cup sour cream
2 Tbsp milk
1 Tbsp finely chopped cilantro 1⁄4 tsp ground cumin
1 garlic clove minced
Juice of 1 lime
Kosher salt and freshly ground black pepper, to taste
Remaining ingredients:
1⁄4 cup red wine vinegar
1 Tbsp sugar
11⁄2 tsp kosher salt, plus more to taste
2 cups finely shredded red cabbage
1⁄2 cup chopped cilantro
3 Tbsp tequila
1 Tbsp ground cumin
2 tsp minced garlic
2 limes, divided
2 lbs skinless mahi mahi fillet (or other firm white fish), cut into 1-inch cubes Canola oil, for grill
16 (6-inch) flour tortillas
1 cup crumbled cotija cheese
Hot sauce, for garnish
DIRECTIONS
Combine sour cream, milk, 1 Tbsp cilantro, 1⁄4 tsp cumin, 1 garlic clove, juice of 1 lime, salt and pepper. Transfer to a squeeze bottle; refrigerate.
