                   Blueberry Muffins with Coconut Oil
                                 Servings: 1 dozen | Prep time: 15 min | Total time: 45 min
DIRECTIONS
1. Preheat oven to 350°
2. Cream the coconut oil and sugar until light and fluffy.
3. Beat in one egg at a time, then vanilla.
4. Mix flour, salt and baking powder. Add into batter in 3 stages. 5. Coat frozen blueberries with 1 tsp of flour.
6. Mix quickly into batter (batter will get very cold and sticky) 7. Scoop into lined muffin pan.
8. Bake for 25 min. When a toothpick comes out clean it’s done – enjoy!
INGREDIENTS
2 1/3 cup flour
1 cup coconut oil
13⁄4 cup coconut sugar or regular sugar 4 eggs
2 tsp baking powder
1⁄4 tsp salt
1 tsp vanilla
21⁄2 cup frozen blueberries
