“Omega-3 fatty acids are essential nutrients that we must get from our diets because our bodies cannot make them; they are crucial for early brain development, and there is much evidence that they promote cardiovascular health and cognitive function.” – Joel Fuhrman
Courtenay: One Thanksgiving, when my mother was in deep vegetarian mode, she made her ‘own’ decision that the entire family would be deprived of the pleasure of having the traditional Thanksgiving feast and proceeded to plan a meal deplete of any form of meat based protein in any form, liquid or solid. This, of course...and we found out to our dismay when dinner was served...meant that there was no Thanksgiving turkey. Sure, it was colorful, and colorful foods are supposed to be healthy...but seriously!
Instead there lay an Omega-3 rich, seasonally colored, mixture of different types of squash, held together with toothpicks and made to look like the turkey that was being so sorely craved by all of our growling stomachs.
One look at that monstrous ‘beast,' that imposter in our midst, that our hearts immediately sank. We refused to touch it, let alone look at the thing. It remained at the center of the table the entire evening...and I think my mother is the only one who carved and ate any of the offending thing.
She didn’t hear the end of it that evening, nor for weeks thereafter...since we were also robbed of our delectable leftovers. That dastardly deed still comes up to this day.
