Vegetable Soup with Cordyceps
A warming, nourishing soup for lunch or dinner.
Ingredients:

1 carrot

½ zucchini
•
½ onion
•

500 ml vegetable broth
½ tsp DXN Cordyceps powder
Salt, pepper, herbs to taste
How to prepare:
Sauté onion and carrot in a little oil.
Add diced zucchini and broth, simmer until soft (~15 min).
Blend until smooth, stir in Cordyceps powder, and season.
Serve warm.
