CRANBERRY MUFFINS
   INGREDIENTS
2 cup gluten free flour
1 cup coconut sugar
1 1⁄2 t baking powder
1⁄2 t baking soda
1⁄2 t salt
2 T softened butter or coconut oil
1 orange, juiced + water to make 3⁄4 cup of liquid
5 drops orange essential oil
1 egg, beaten
1⁄2 cup fresh cranberries, chopped 1⁄2 cup dried cranberries
DIRECTIONS
Preheat oven to 350.
Combine first 5 ingredients, blend in butter. Place squeezed orange juice in 3⁄4 cup and add water to equal a full 3⁄4 cup.
Blend into flour mixture Add egg and fold in cranberries Pour into muffin cups Bake at 350 for 12-18 minutes Makes approx. 18 muffins
