BROCCOLI BAKED POTATOES
Time to Make: 40 to 70 minutes | Servings: 6

  DIRECTIONS
1. Preheat the oven to 350 degrees F.
2. Scrub potatoes. Poke potato skin with a fork in several places.
3. Bake for 30 to 60 minutes until soft, depending on the size.
4. Steam broccoli just until tender and chop into small pieces.
5. Slice the potatoes in half. Scoop the insides into a bowl with the broccoli. Add milk, 3/4 cup cheese, salt, and pepper. Mash together until the mixture is pale green with dark green flecks.
6. Put the potato mixture into the potato skins and sprinkle with remaining 1/4 cup of cheese. Microwave to heat through.
INGREDIENTS
6 medium potatoes
3 stalks broccoli
1/4 cup low-fat milk
1 cup shredded light cheddar cheese
Salt and pepper to taste
