mise en place
If you’ve ever wondered how Chefs can produce so many ex- cellent, interesting plates in a short 2-hour service period, it’s “mise en place.”
The French term for “set in place,” means to have all the ingredi- ents of your plates measured, cut, peeled, sliced, grated, etc. before service.
Mise en place also includes, of course, keeping all your tools, pots, pans, mixing bowls and knives within arm’s reach.
