There was no dry eye in the house when we watched Big Jim Hudgins walk in both con- tests. He shared on the mic, how this event meant so much to him because when he re- turned from service, he turned to cocaine and alcohol to cope. Cooking saved his life and gave him a new avenue to cope. He had put up $1,000 out of his own pocket for the Grand Champion prize. When his name was called out as Grand Champion, the ground began to shake as people rose to their feet, jumping to congratulate him. Some may not have noticed, he handed the envelope back to the promoter to go to the cause. There may not be a heart bigger than Big Jim’s.
And with all this talk about hearts, how about a hearty bowl of BBQ Stew!
BBQ Stew
Man this is good! You won't be disappointed you tried it.
You can use either canned or fresh vegetables. If using canned,

drain juice before adding. If using fresh in- gredients, you will need to cook them sepa- rately first.
Directions:
Step 1: Grab 3-4 medium size potatoes. Wash and cube. Wash 3-5 medium size carrots. Add both to water and boil 25-30 minutes.
Step 2: Chop 1 yellow onion and 1 red bell pepper. Add 3-4 TBSP Olive Oil to Dutch oven and warm over medium heat. Saute onion and bell pepper until caramelized
Step 3: Drain 1 can each of green beans, sweet corn, tomatoes, and pinto beans. Red beans also work for this dish. Add to dutch oven and stir.
Step 4: Add boiled potatoes and carrots and stir.
Step 5: Add 1 1/2 to 2 cups of Big D's Original BBQ sauce. Stir.
Step 6: Add lay or pulled pork. Stir.
Step 7: Add 4 TBSP of Big D's Hurricane Rib Rub. Cover and cook 30 minutes.
Step 8: Eat :)
