we were doing by trial
and error. However, it
was time to jump start
our fledgling SCA ca-
reers and find a way to
learn the true techniques
and incorporate them into
our cook process. I know
several BBQ cooks who swear by the things they learned at a cooking class offered by the legends in the BBQ world. These classes, while excellent, are expensive when you fac- tor in the per person class cost, travel, lodging and time necessary to attend – easily in the thousands of dollars. Hands on, in-person, training is a great way to learn. Much of what is taught isn’t in their cookbooks or any YouTube videos and that is why they are special. You also must take your own notes while trying to visually learn as handouts (or recipes) are rarely provided.

There are no celebrity chefs or cook wannabes – only proven, award winning competitive cooks. An SCA class from 2019 SCA World Points Cham- pion, Matt Ouverson, 2018 SCA Cookoff World Champion, Terry Roan, World Champion runner-up Shawna Roppolo or SCA legend Allen Newton was in our future. The steak classes are available for less than the entry fee to most SCA contests ($149) or for only $20 more you can upgrade to an all-access pass giving you access to the cooks private Face- book page where you can ask questions and they will an- swer them. If BBQ is your area of interest, there are videos from eight multiple award-winning champions such as Joey Smith, Mark Lambert, David Bouska and Corey Mikes. The BBQ series is available on an ala carte basis for $249 for the first protein and $150 for each additional protein or $599 for all four proteins which include the all-access pass.
