Smoked Carrot Cake with Glaze
Ingredients:
3 cups all-pur- pose flour
1 1⁄2 cups packed light brown sugar
1 teaspoon baking soda
1 teaspoon ground cinna- mon
3⁄4 teaspoon
kosher salt
3 large eggs
1 cup unsalted butter, melted 2 cups grated carrots
1 (8 oz) can crushed pineapple in juice, drained 1 cup unsweetened shredded coconut
2 teaspoons vanilla extract
1⁄2 cup plus 2 Tablespoons whole buttermilk
1 cup toasted pecans 1 cup powdered sugar
Directions:
1. Bring smoker to 350 degrees
2. Whisk together dry ingredients (flour, brown sugar, baking soda, cinnamon, and salt)
3. In separate bowl, whisk eggs in large bowl. Add melted butter, grated carrots, pineapple, coconut, vanilla, and 1⁄2 cup buttermilk. Whisk until combined.
4. Stir in flour mixture into egg mixture.
5. Fold in toasted pecans.
6. Grease two 8 x 4-inch loaf pans with softened butter. Lightly flour.
7. Split mixture into two loaf pans.
8. Smoke approximately 1 hour until toothpick stuck in center comes out clean.
9. Make glaze by whisking together powder sugar and remaining 2 Tablespoons buttermilk into small bowl. Drizzle over cooled car- rot cake loaves.
Pepperoni Rose
Line pepperoni slices around the top of a glass. (wine glasses pre- ferred)
Continue to layer.
Turn glass upside down and push pepperoni onto flat surface.
Smoked Mac and Cheese
Ingredients:
1 lb elbow macaroni noodles
1⁄2 cup butter
1⁄4 cup flour
1 Tablespoon mustard powder
2 cups whole milk
1 cup heavy cream
8 oz cream cheese, softened (cut into 10-12 pieces)
3 cups grated mild cheddar cheese
1 cup gouda cheese
1 cup Parmesan cheese 1⁄4 teaspoon Big D’s Q STEAK OUT
3 slices bacon, diced
Directions:
1. Cook the pasta al dente
2. Make a cheese sauce in large cast iron skillet
a. Melt butter, then whisk in flour. Whisk in mustard powder. b. Whisk in milk and heavy cream and cream cheese.
c. Bring just to a boil, turn off heat.
d. Add the shredded cheese in small handfuls and whisk until smooth.
e. Toss the pasta in the cream sauce.
f. Add 1⁄4 teaspoon STEAK OUT and mix
g. Place the pan in the smoker at 225 degrees for 1 hour.
h. Brown 3 slices of diced bacon and place on top of mac and cheese.
