Want to keep Thanksgiving traditional as possible but also want to change it up a bit? I came across this same situa- tion. While on one hand (in my house) there has to be Turkey on Thanksgiving, on the other sometimes we want something a little different. So I came up with this recipe that I hope you will enjoy. The turkey breast pairs well with traditional as well as non traditional side items.
Asian Style Grilled Turkey Breast w/ Apple Mirin Glaze
Ingredients:
6 lb Bone in turkey breast
Marinade:
1⁄2 cup Sesame Seed Oil 1⁄2 cup Soy Sauce
1⁄2 cup Rice Wine Vinegar 2 Tbsp. Brown Sugar
2 Tbsp. Lemon Juice
Directions:
Mix all ingredients together and place in large ziplock bag with turkey breast. Marinade overnight.
Mix 1 Tbsp of ginger powder and 1Tbsp of baking soda (helps with crispy skin) to your favorite poultry rub season- ing. Remove turkey from marinade and pat dry. Apply rub liberally all over turkey breast and under the skin. Prepare grill for indirect heat and let turkey sit while grill heats up. Place breast indirectly on the grill and cook until 160°- 165° internal temp, turning once midway through to en- sure even cooking. While cooking prepare the glaze as fol- lows: heat 1⁄2 cup of apple jelly, 1⁄2 cup mirin seasoning, 1⁄2 cup honey, and 1 1⁄2 tsp Tiger sauce stirring until everything is combined. Add glaze during the final 15 - 20°. Remove from grill, tent with foil and let rest, at least 15 minutes. Top with toasted sesame seeds slice and enjoy.
