Competition Chicken
 Ask any competition BBQ cook what category gives them the sweats. Most will say chicken.
It would seem that grilling a piece of chicken is relatively easy compared to brisket or ribs. But competition chicken has to be perfect in every way ā€“ from the uniform shape and size of each piece (usually thighs), the glistening coat of silky BBQ sauce, the bite-through skin, and moist, flavor-packed meat. Keep in mind, competition cooks bend over backwards to blow away the judges who only take one or two bites. They rarely cook like this at home.
