For a more thorough job, cut along both sides of the spine and remove it altogether. Discard the brown goop (kidneys) nestling close to the spine and toss the spine in a zipper bag in the freezer along with the gizzard, heart, and neck for making stock. You can save the liver too, but don’t put it into the stock. Put it into a separate bag for chicken liver pâté or for the dog.
