 To set up your grill for 2-zone cooking, simply pile pre-heated charcoal briquets on one side of your grill’s charcoal grate to create a hot (direct) infrared heat zone on one side and a cool (indirect) convection airflow zone on the other.

 Place a digital
 thermometer probe just above the cooking grate on the indirect
