Spareribs (a.k.a. Spares, Side Ribs)
Spareribs are not like spare tires. They aren’t extras, leftovers, or somehow inferior cuts of pork with little meat to be found on their bones. Instead, they are the largest ribs and they con- tain excellent meat that is arguably richer and more flavorful than babybacks, due to more marbling and connective tissue between the bones.
