  Put a pan of water between the burner and the food. The wa- ter absorbs heat and helps minimize fluctuations in tempera- ture. The moisture also mixes with the smoke and propane combustion gases and creates flavors you cannot get with smoke alone.
When shopping for a gas grill, the more burners the better. You will appreciate the real estate and the ability to control temperature. Since none of them allow you to control airflow, there isn’t a real significant difference when it comes to smok- ing.
