  Pour the gravy into a pre-warmed coee carafe to keep it warm, especially if you have to go to someone else's house for dinner. The fat rises in the thermos, so you can just pour some o before serving, or shake it up to mix it in. When you are ready to serve the bird, you can transfer some of the gravy to a pre-warmed gravy boat or serving bowl if you don't like the looks of the carafe. Splash some on the carved meat just before you put the platter on the table.
