 Steak Fajita fried eggs
Ingredients
1 tbsp coconut oil
1 red onion slices
1 orange or yellow pepper
5 cherry tomatoes, cut in half
140g beef medallion steaks.
Sliced into 1cm strips
1 tbsp fajitas seasoning
2 eggs
Juice of 1⁄2 lime
1⁄2 ripe avocado, de-stoned and sliced Hot sauce, to serve - optional
Method:
1. Melt coconut oil in a large non-stick frying pan over medium heat to high heat. Put in sliced red onion and pepper with a pinch of salt. Fry for 5 minutes, until the onion has collapsed and is nearly soft.
2. Drop in tomatoes and sliced steak. Spoon over fajita seasoning then give everything a mix to coat the spices. Using a wooden spoon, create two holes in the fajita mix. Crack the eggs then crank up the heat.
3. Place a lid on the pan and cook for a further 2-3 mins until egg whites are set and yolks are still runny. By this point the steak will also be cooked.
4. Take the pan off the heat. Remove the lid, squeeze over the lime juice and top with sliced avocados. Drizzle over hot sauce if you like.
