dextran (or as we call them, the substrates), are required for the production and activity of enzymes. These glucans are not commercially available. So, we are growing S. mutans anaerobically with 5% CO2 for their production in our lab. But, I’m getting low yields, only 70 80 mg for 100 mL of the medium. I still need to optimize their production conditions and confirm their structural identity.
