Thai Bean Burger
Thai Sweet Potato & Bean Burger. Healthy and delicious!
RECIPE
Ingredients
Patty
. Sweet Potato - 475g
. Black Beans - 1 tin
. Breadcrumbs (vegan) - 2 cups
. Thai spice mix - tblspn
. Peanuts - 1 cup crushed
. Lime
. Coriander
. Chilli optional
. Teriyaki sauce - tblspn
. Sesame seeds - tblspn
. Chia seeds - tblspn
. Rock Salt
. Black Pepper
Toppings
. Red Onion
. Lettuce
. Avocado
. Tomato
. Roasted Sesame sauce (make your own vegan) . Wasabi paste (vegan) & Mayonnaise (vegan)
. Rock Salt
. Black Pepper
. Bread Rolls (vegan)
. Optional Vegan Cheese
Method
Blend beans. Boil sweet potato & mash. Put all patty ingredients in a bowl & mix well. Shape into large thick patty’s. Cling wrap & refrigerate for an hour to firm. In a frying pan cook patty in oil until well done, if too thick will need to finish cooking in the oven. Spread sesame sauce on bun bottom, spread wasabi mayo on top bun. Put slice of lettuce on base then put patty, add Avocado, red onion, tomato, another piece of lettuce optional, salt & pepper. Enjoy!
