C.  Dimsum Siu Mai Recipes
                       Main Ingredients:

                       1.  Siu mai wrappers                       20 pcs
                       2.  Leg quarters chicken                   ½ kg

                       3.  Shrimp (peeled & deveined)             ¼ kg

                       4.  Dried shiitake mushroom                4 pcs
                       5.  Carrot (minced for garnish)            100 gr


                       Marinade:

                       1.  Soy sauce                              15 ml

                       2.  Oyster sauce                           30 ml
                       3.  Salt                                   5 gr

                       4.  Sugar                                  10 gr
                       5.  Cornstarch                             10 gr

                       6.  Baking soda                            2,5 gr

                       7.  Water                                  30 ml
                       8.  White pepper                           5 gr

                       9.  Chicken bouillon                       5 gr
                       10. Sesame oil                             15 ml

                       11. Vegetable oil                          5 ml


                       How to make:

                       1.  Step 1: Chop & prepare ingredients
                          a.  Leg quartes chicken:

                              Separate the chicken meat from the bones, then chop finely (minced).
                          b.  Shrimp:

                              Wrap in a paper towel and squeeze out as much moisture as you can. Mince into
                              fine bits.

                          c.  Dried shiitake mushrooms:

                              Reconstitute in hot water for 10-15 minutes. Then, squeeze out as much water
                              as you can. Slice the mushroom in half, lengthwise. Cut into strips, then mince

                              into fine bits.

                          d.  Carrots - Cut into slices, strips, and then very fine bits (minced).
