used in convection or combi ovens making it ideal for use with the cook-and-chill process. Options include a pass-through system, HACCP controls, and insulated floor and ramps. ELECTROLUX PROFESSIONAL AIR-O-CHILL BLAST CHILLER - STODDART
The speed at which the chilling or freezing takes place is fundamental to the system, as it determines the quality of the food at time of storage, regeneration or serving. Blast chillers are designed to rapidly reduce food temperatures from 90oC to 3oC in less than 90 minutes, and to -18oC in less than four hours. Electrolux Professional Blast Chillers have all bases covered, with six chilling or freezing cycles being soft chilling, hard chilling, holding, shock freezing, freeze holding, turbo cooling and cruise cycle. Cruise cycle automatically controls the chilling process according to the food
type and size of the food load. Electrolux has a two-program memory for each cycle allowing you to set both time and air temperature. Its profile and capacity match with Air-O-Steam and Air-O-Convect combi ovens, with dimensions of 895mm wide x 1007mm deep.
