With consumers hungry for prepared foods with authentic barbecue flavours and textures, Heat and Control’s continuous Rotary Brander delivers a genuine char-grilled finish.
PERFECT grill marks on a steak are a treat for the eyes and the palette. Branding and searing food enhances not only the appearance but its flavour as well. A good searing on meat, fish or poultry seals in the juices and prevents the food from sticking to the grill.
Heat and Control’s Rotary Brander gives food manufacturers greater control over the processing line. Heat and Control processing sales manager Greg Pyne says customers can control the type of finish on a product by the number, height and angle of the burners used.
“The Rotary Brander has a variable speed conveyor, belt rinse system for easier clean-up, and self-contained combustion and control systems. Operating and combustion controls are fully pre-piped and wired to reduce installation time and costs.
“Remote control panels, as well as roll-away units on casters for more production flexibility, are available to suit your particular plant requirements,” he says.
Where the brander is in the processing line can also differentiate the product. Pyne saysdependingonwhereitis
placed results in a different tasting end product. The brander continuously brands grill marks on meats, poultry, seafood, vegetables and bread.
Brand can be applied to the top, bottom, or both sides and can also include custom markings such as diamonds. The floating ring top wheel conforms to variations in product thickness such as chicken breast fillets, Pyne says, so control over branding colour is easily adjustable with the ability to adjust branding depth and speed to suit product requirements.
The Rotary Branders have a short footprint so can be mounted onto existing cookers and conveyors, or as a portable, self-contained conveyorised unit. The variable speed branding wheel adjusts to accommodate different product thickness and can be raised clear when branding is not required.
Available in free-standing two side, top or bottom configurations, the Rotary Brander can also be used in combination with a Direct Flame Searer to apply grill stripes to both or one side of the meatproduct. ✷
