Despite the huge figure and the fact that this was the second time he’s been publicly hung out to dry, some in the hospitality and food media industries still came to his defence, blaming the industry as a whole rather than acknowledging his own actions. In times
like this, it’s more important than ever for
our industry to band together against wage theft and the mistreatment of workers, to send a clear message that this is not OK in foodservice, or any business. As one of the most known chefs in the country, the responsibility is with Calombaris to lead by example to
help hospitality thrive. Working with food is tough, and we’re facing a skills shortage due to scandals like this deterring people from beginning a hospitality career, so it’s our jobs to make sure wage theft is no longer systematic, but called out, shamed and eliminated.
