Stu ed Roasted Bu ernut Squash
Serves 4
Directions
Hollow out the Bu ernut Squash, scrape out the seeds. Brush the edges with oil. Place on wax paper. Roast the hollows in the oven for about 45 un l almost cooked through.
Mix all the other ingredients together in a bowl, add salt and pepper if desired.
Place the Rice mixture into the hollows and cover with foil.
Cook in a medium oven for about 25 minutes, or un l the bu ernut squash is cooked through.

2 small Bu ernut Squash
2oz/50g Black Rice, cooked
2oz/50g crumbled Broccoli
1 Tablespoon Roasted Flaked Coconut 2oz/50g Small can Water Chestnuts, chopped
2 Dates, cut into ny pieces 1 Tablespoon Sesame oil
