       MANGO ‘MOJITO’ MOCKTAIL

        Ingredients                        Method

       •  2 limes                          1.  Halve limes, then cut 2 slices from lime and reserve. Juice remaining
       •  2 mango’s, peeled                    lime. Roughly chop 1 mango. Place chopped mango in a blender and

       •  1/2 tsp caster sugar                 blitz until smooth. Add lime juice and sugar, then blitz until com-

       •  1 cup ice cubes                      bined.
       •  1 cup soda water                 2.  Divide ice cubes between 2 beer glasses. Pour over mango mixture,

       •  2 mint sprigs                        then divide soda water between glasses.

                                           3.  Cut remaining mango into 2 wedges. Top each glass with 1 mint sprig,
                                               1 lime slice and 1 mango wedge. Serve immediately.



       LYCHEE, WATERMELON & MINT MOCKTAIL


        Ingredients                        Method

       •  2 limes                          1.  Juice 2 limes and cut remaining lime into wedges. Place lime juice

       •  6 fresh or canned lychees            and lychees in a large jug. Using a muddler or wooden spoon, mash
       •  500ml coconut water, chilled         lychees slightly to release juice. Stir in coconut water.

       •  100g watermelon                  2.  Divide watermelon wedges among 4 x 450ml glasses, then fill with ice.

       •  1 cup ice cubes                  3.  Divide lychee mixture among glasses. Top up each glass with
       •  1 1/2 cups lemonade, chilled         lemonade and garnish with mint. Serve with lime wedges.

       •  2 small mint sprigs
