Coordinated by the Market Intelligence area, the Beef Desk joins managers on a daily basis from various levels – Sales, Planning and Pro- duction, Cattle Procurement, Treasury, Trad- ing and Market Risk as well as the COO and CEO – to exchange information and strategic decisions, based on interpretation of current market forces and the potential impact on price curves for inputs and finished products, outlining the short-term operating strate- gy. Various resources are used in an effort to

mitigate the risk of price volatility while also maximizing margins.
The Beef Desk functions as a commodi- ty trading desk, aimed at providing agility and assertiveness when making decisions. The Company also holds weekly meetings – Choice Meeting and Pricing – to establish the allocation of more profitable beef cuts in the market, based on the assessment of aspects such as labor costs, shipping, taxes and more, for the period analyzed.
