     Method
 Wash and peel all of the vegetables.
 Prepare the broccoli into small florets.
 Slice the leeks and potatoes and set aside.
 Dice the onion, carrot and celery and fry in a large pan with the garlic.
 Add the sliced leeks and continue to sauté.
 Add the flour and mix well.
 Slowly add the vegetable stock continually stirring to avoid lumps.
 Add the broccoli and cook for approximately 6 minutes. Season if required.
 Place in an ovenproof dish or tin and arrange the sliced potatoes on top.
 Brush with butter and bake in the oven Gas 4/180°C until the potatoes are cooked and golden brown
