                       Method
 Soak the noodles in hot water until soft.
 In a suitable pan fry the onions for 2-3 minutes in a little vegetable oil.
 Add the mixed peppers and grated carrot, cook for a further 3 minutes.
 Add the Chinese leaf and noodles, cook for a further 4 minutes
 Add the sweet chilli sauce and bring back to temperature, when it is back to temperature add the bean sprouts and serve.
   Finish with chopped coriander.
